After the Storm - Mother Nature Glistens

Toronto and surrounding areas were hit with a freezing rain storm this past week, and while most of the accumulation of ice disappeared in the city within 24 hours, the sight when I arrived at our country home for Easter weekend -was completely different and with a few surprises.

As you can see ... unfortunately we lost a few trees ... it was especially sad to see this huge one down.

I was surprised how warm the temperatures started to get while we were out surveying the damage.

And after every storm ... there is beauty to be found, and though these photos do not show it ... it was like a glistening wonderland when the sun popped out. The ice on the trees looked like strings of diamonds glistening on the branches.

Morning Skin Care Routine

My morning skin care routine begins with splashing my face with cool to tepid water and gently dabbing it dry with a face cloth. Lets face it ladies if you have cleansed (as you should) before going to bed - your face is not dirty, so no need to go through the cleansing process again. As Shopper's beauty consultant Gina and other skin care experts have told me over the years - cleansing in the morning strips all the goodness from your night time skin care.

Afternoon Tea at Shangri-La (and What I Wore)

Let it rain outside ... I'm inside where it's warm ... and afternoon tea is being served!

When it's cold, damp and rainy outside ~ a fireplace is a welcoming sight.
And afternoon tea at Shangri-La was just the place to have a meeting with a friend on this dismal rainy afternoon in Toronto.

Savory sandwiches, warm oven baked scones,
and a delightful selection of tea pastries ...
paired with one of the over 70 tea selections = Bliss on a rainy day.

The dragon motif tea china is just lovely ...

Ms. Janice always looks so polished ... and was happy to share her outfit with HHL readers:
dress: Aritzia (last season) - Babaton Collection; shoes: Hilary Radley

And a little earring bling ...
I purchased these from Luxuria a couple of years ago
and always get wonderful compliments when I wear them.
They added a little bling on this rainy day!

Brought out the lion to keep me dry!

If  you are in Toronto over the Easter weekend I highly recommend Shangri-La's Easter Afternoon Tea  ...  visit their website for complete afternoon tea menu details HERE.

Cooking in Heels:Stuffed Calamari

This is one of my favourite childhood dishes. And I vary the rice stuffing per what I have on hand.

 On this occasion I used:
1-large red pepper, 2 shallots, 1 large portobello mushroom cap, 1 cup frozen peas, 2 cups cooked rice (basmati) or your rice of choice.

5 fresh or previously frozen squid tubes (thawed)

Additional ingredients:
Olive oil, thyme, ground pepper, sea salt, basil, oregano,
1/2 jar tomato sauce  (I used homemade sauce)
basil for garnish

Cut portbello mushroom cap and red pepper into cubes; chop shallots;
heat olive oil over medium heat;
add vegetables to skillet, stir to coat with olive oil and add spices.

Cook stirring frequently, over medium heat, until vegetables are softened

add rice and peas to skillet and stir frequently until warmed up

remove skillet from stove - and set aside.

Cover the bottom of baking dish with tomato sauce.
Use tooth pick to seal one end of squid and using a tea spoon, scoop mixture into squid.
be sure to fill loosely as squid tubes will shrink.
Layer squid in single layer in baking dish and top with additional tomato sauce.

NOTE: Reserve extra rice for side serving. Keep warm - can be lightly reheated in skillet on low or place in oven covered with foil when spooning squid with tomato sauce.

 Bake in pre-heated 350 °F oven for 40-50 minutes.
Spoon sauce over squid half way through baking.
Garnish with fresh basil before serving.

Serves 2 -
serve with baguette and glass of bubbly

Enjoy lovelies ...

What did you make for dinner?
